Honing her skills on the floor at some of the Melbourne’s most prestigious venues including 312, Cumulus, Jacques Reymond, Attica and Rosetta, Hannah Green (Etta) felt she was ready to go out on her own and open a restaurant. But the challenges were far greater than she’d imagined.
