Hop And Brew School Ep6 | Hop Oil Fractions

In this episode of The Hop And Brew School Podcast, Yakima Chief Hops Technical Manager, Pat Jensen, is back on the show, along with Technical Brewer, Tommy Yankon. We continue our discussion of the science behind hops from the last episode, this time focusing on hop oil fractions. We discuss the major groups of hop oils, including thiols, esters, terpene oxides, aldehydes and ketones. Pat dives deep into each of the major groups and helps us understand what each does and how they can be expressed in beer. That leads to a discussion of flavor active polyphenols and how we can both recognize, and utilize, those flavors in our beer. You'll learn about which hop oil fractions matter most in your beer and how you can use them to your advantage. All that and more on this episode of The Hop And Brew School Podcast!
