Homebrewing beer. Malcolm Frazer of Brulosophy joins us to talk about a recent exbeeriment they conducted comparing beer flavor between decoction mashing and single infusion mashing of a German Pilsner recipe. Decoction is a age-old technique for achieving better extraction and hitting the mashing rest temperatures with less modified malts, but how much difference does it make in the beer flavor. Fans of decoction swear that it adds that little something extra you just can’t get from infusion mashing.
