When making the choice to go full plant based, Gill decided she needed to figure out how to prepare meals and snacks for herself which sparked her bakery, Gingerly. This transitioned into looking for somewhere for her to make her products available to customers so she started up The Trinity Market. A local vendor market that happens in downtown St. John’s every second Sunday, the Market has grown to host a number of small vendors alike and makes for a great place to check out on a Sunday afternoon and support local.
