Scully, as he’s known, grew up in Malaysia and Sydney with a mixed heritage of Chinese/Indian, Irish and Balinese before becoming Ottolenghi’s head chef at Nopi, and shows Gilly how to cook a staff lunch of salmon in soy, garlic and ginger sauce.
