'Slow Crafted Spirits', the tagline that attracted us to Chuckanut Bay Distillery, is a a philosophy of business Matt and Kelly take seriously. Their distillery is growing, but the artisan atmosphere is still alive. From their humble origins, where they powered their mill to crush their potatoes with a fixed gear bicycle frame, this duo has distilled the hard way-- slowly and with care. They source grains and potatoes directly from farms in Whatcom county, mash, ferment, distill and bottle at their location in Bellingham, a block away from the Bellingham Farmers Market. Our goal is simple. Champion the Spirit of Craft Distilling What is Craft Distilling? It’s more easily defined by what it is not. It’s not spirits produced in a factory, in a place you’ve never heard of, in batches with 10s of thousands of gallons at a time. It’s akin to craft beer in the 1980s, it has die-hard fans and it’s poised to re-emerge as a contender to the commercial brands, but most most people don’t know a damned thing about it. Right now the craft distillery scene is driven by an intrepid group of men & women learning their craft in small shops all over the country, sometimes only producing a few hundred gallons a year – a total production far less than commercial “small-batch” runs. They have the flexibility to create, experiment and test the limits of our palates.
