Butcher Girl takes centre stage!
One of the featured events of the Beef Australia expos is the Nose to Tail dinner- where a carcase is cut down on stage to reveal some of the complexities of meat preparation, all the while guests are treated to the delicious results on their plates. At Beef21, the spotlight was on butcher Alison Meagher, or Butcher Girl as she is known. The beef industry has a wonderful relationship with Alison. Not only has she found a career in meat, but it's taken her around the World, showcasing Australian product to some of the planet's highest rollers in the most spectacular places. It also meant finding the love of her life, as they both wielded butcher's knives on opposite sides of the cutting bench.
